Hallelujah, spring is finally here! That means spring cleaning, visits to the park and gardening. Start your garden off right with these 8 foods that you can regrow yourself, saving you money and trips to the grocery store.
1. Celery, Cabbage and Romaine Lettuce
Using a pie plate, submerge the roots, leaving the tops above the water line. Spray with water a couple times a week, replacing the water every few days. The leaves will sprout in about a week. Plant the cutting in a pot with only the leaves above the soil. Harvest when fully grown in about 5 months.
2. Onions
In a pot, plant the root end and lightly cover it in soil. Keeping the soil moist. Carefully separate the new onions, leaving the roots attached and plant them. Occasionally cut the leaves down to promote full growth. It can take up to 5 months for plants to mature enough for harvest.
3. Mushrooms
Using a mixture of compost and soil in a pot, plant the mushroom stalk in the soil with only the surface of it exposed. If the cutting takes, new growth happens quickly. Harvest and repeat.
4, Potatoes and Sweet Potatoes (I'm counting these as one)
Cut the potato in 2 pieces, each having 1-2 "eyes" on it. Set the pieces out at room temperature for a few days until fully dry. Plant 8 inches deep and 12 inches apart with a 4 inch deep hole above the plant. Add more soil as the plant grown until it is about 6 inches tall.
5. Pineapple
Slice off the green leafy top and remove all fruit. Carefully remove the bottom layers until you see the root buds. Place it in water for 2 weeks to form new roots. Growth will happen in the first few months but it will be 2-3 years before harvest.
6. Garlic
The larger the clove you plant, the larger the resulting bulb. In a pot, plant the clove and place it in a sunny window. Keep the soil moist. The bulbs will be ready for harvest in early summer when the bottom 1/3 of the leaves have yellowed.
