Try raising organic garlic. Plant individual garlic cloves early in the spring or fall. They should be planted in well-drained moist soil. Lay each bulb into the ground ends up at a distance of about 4 inches away from the next bulb and 1-2 inches down into the soil. As your garlic shoots grow, you can cut them and use them instead of scallions or chives. When the tops of the bulbs turn brown, they're ready to harvest. Dry the bulbs well in the sun for several days to harden the skin. Store the dried bulbs loosely or in bunches in a dark, cool area.
