Q: I planted sweet potatoes this spring and the vines are growing well. How I will recognize the right time to harvest them?
A: You can harvest them anytime you like before frost hits the leaves. The longer you wait, the bigger the roots will be. Harvest is usually 100 -120 days after planting. Gently dig a few to see how big they are now. If you decide to harvest them all, be sure to “cure” them by placing in a warm, dark spot for a week before you store them. This suberizes the potato skin so it resists abrasion and rot.
