Best food to grow for healthy living

Question
Hypothetical situation. Lets say the world economy crashes, and food is scarce and expensive. Now in this situation, I have a source of water and meat, and land in northern central kentucky, which is pretty much good for growing whatever. What would be the best fruits and vegetables to grow to make sure Im getting all the vitamins and minerals and whatever else that I need to stay healthy?

Answer
Dear Chris,
Interesting question . . . Of course, many vegetables would be good, so if you have the space and the climate, it would behoove you to have a good sized garden with variety.  Now, to get specific, tomatoes are high in Vitamin C and beets are high in iron, as well as being good livestock feed.  Most any veggie would be good, but peas and iceberg lettuce tend to take more room while offering little in food value.  Asparagus is a very good source of potassium.  Vegetables of most any kind would be quite valuable in your hypothetical scenario.  I recommend looking into a health book that addresses diet and vitamins and minerals.  See which foods overlap in quality of vitamins.  As for fruit, most of them are on trees or bramble bushes.  Plant a variety garden and you should be all right.  After all, there were a number of generations that survived just fine eating what they found.
I wish you well.
Kind Reward,
KD Liz
