Hi Mike, Please advise whether Butternuts will ripen if harvested whilst not ripe. I picked a couple - the skin was not dark enough and the inside was pale - will the rest ripen completely if off the vine?

Yes they will, but they will take a little longer than had they ripened on the vine. Just be sure to keep them in a cool, dark location, such as a basement or garage. As long as the temperature is between 45F and 65F, they will ripen with no problems.
