AnswerYes, you should mulch them. You can wait until the ground freezes, or at least is cold, because the mulch will mediate the temperature. Uncover the shoots in the spring, after all danger of frost has passed.
Don't expect to harvest any shoots next spring, let them grow and leaf out. Start harvesting, in a limited manner, the following year.
