QuestionSomewhere on the web last year I read how to can some habanero peppers. I cleaned them and the canning jars. Placed the peppers in the jar inside another pot of boiling water add the balsimac vinagar and then turn down the heat. Then simmered for fifteen min. I sealed the canning jar and let cool the jars lid has sealed and I have been rotating it every day on the shelf. Is this safe to used and what is the shelf life before opening and after. ( still afraid of the heat lol)

If the jar is sealed, the shelf life is indefinite. The heat will continue to intensify through the shelf life, however; so that is to be considered. Once you open the jar, place it in the refrigerator and the peppers should last for several months, refrigerated.
