Banana squash can get quite huge, depending on your growing conditions. Winter squash needs to be fully mature to have good flavor. The stem should be brown and dry - fruit size doesn't matter. For storage, the skin should be tough enough that your fingernail doesn't puncture it when pressed. This usually won't be until late fall.
