My recommendation on growing tomatoes in pots in hot weather is as follows:
1. Keep a 50% screen over them during the extreme hot periods.
2. Water daily.
3. Fertilize every 10 days.
4. For the roots you can use any good mulch near the bottom to help keep drained. I doubt that this will insulate and keep them cool.
