hierloom Amish Paste tomatos


Question
we had a bumper crop, but during canning and sauce making I found them excessivly juicy, we water every other day, deeply, are we watering too much? live in Mt. Shasta CA no rain in the summer

I'm sorry - I don't know what happened to my first answer to this question, it doesn't seem to have appeared.

I have not grown this particular variety, so I can't say for sure if your watering had anything to do with their juiciness, but it's possible.

Tomatoes like hot weather - to a point, anyway. They need about 1" of water per week. I always stop watering around the end of August here in Oregon, you may be able to continue for a little longer.

Withholding water as the fruits finish ripening will concentrate the sugars and intensify the flavor. I assume that this concentration also translates into less juice.

If your tomatoes continue to be extra juicy, one suggestion would be to take advantage and use some of them for that purpose! I love to make tomato juice with a variety of tomatoes.

The other is to simply cook the sauce longer. If it is really taking a long time to cook down, you can simplify the process by finishing it in the oven. This will take longer, but at least it is "hands free". Just check it once in a while for consistency. This is a great way to make a really intensely flavored paste.
