AnswerThe green portions of potatoes contain a toxin called solanine. If eaten in small amounts, it usually does not cause problems. But for those with weak stomachs or digestive problems, green potatoes can cause diarrhea, headaches, and nausea. This chemical results from exposure to sunlight or extreme temperature fluctuations prior to full maturity, and does not dissipate from ripening.
In short, I would avoid eating potatoes that have more than 10% to 20% of the tuber that is green.
