QuestionOur garden has produced more than we can eat or give away. We do have an underground fruit cellar on our property and wanted to know if certain garden vegetables could be stored in it for future use. The vegetable we have left as it nears frost season, consist of onions, tomatoes in various stages(orange to green), carrots, beets, kohlrabi, green beans and acorn squash. The cellar floor does collect dampness but the remainder of the structure is dry. Any advice you have would be appreciated.

I recommend that you first place a pallet on the cellar floor. That will keep the veges from actually collecting any dampness, as keeping them dry is paramount to keeping them. Onions and acorn squash will last the longest in a cellar. Next would be carrots and beets, although not as long, and they are quite easy to freeze. Green beans freeze well, also. Tomatoes won't last long unless canned. Some people freeze tomatoes, as well, but I never do. Cool and dry is the key to longevity.
