When to pick eggplant and butternut.


Question
This is my first year growing eggplant and butternut squash, and I don't know how big one should be before picking.  I have one eggplant close to 6" long, another closer to 5".  I also have one squash just over 6" long, with many right behind it.  Are they ready?

Dear Michele,
They sound about ready to me.  If the eggplant is the proper color, I'd say it's ready at that size.  Eggplant also gets just a little spongy to the touch when it's ready.  The squash can vary in length, but the rind becomes evenly tan or light beige when they are ripe.  I tend go more by color than size when it comes to squash and eggplant.
