QuestionIs unripe acorn squash edible and does it taste like ripe squash? I had some acorn squash plants die from fungus attack so I picked the unripe (all green) squash to save them from going to waste.

Unripe squash does not taste like ripe squash. Some will ripen in the window, however. Try and see, that's all you can do. I suppose you could treat them like a green tomato or something. They probably won't cause you any problems, they just will not taste like regular squash.
