butternut squash ripening


Question
do these squash continue to ripen after being picked?  we picked several small ones after the vines they were on died.  they are a deep yellow color (interior).  i know that orange is the desired color.  will they continue to turn orange?

Dear Eric,
I wish a had a "sure-fire" plan for you, but I do have a suggestion that has worked for other fruits and vegetables to continue ripening after picking them.  Wrap the squash in newspaper and put them in a paper bag, do not refrigerate.  I don't know how many you have, but I would suggest that you check one in a few days to see if there is progress.  Also to watch for deterioration.  If there is progress, but not enough, leave the rest and continue monitoring.  If there is no progress at all, you might try a sunny window, but I just really don't know about that.
