QuestionI live in Tyler Hill , Pa., northeast Pa. I have an abundance of Roma tomatoes growing and basil and sage. I want to knowif I do not want to make a ton of sauce right away how can i freeze the tomatoes or should i make sauce only and freeze it? Also, the basil, do i just rinse it and freeze it in a plastic freezer bag ?

AnswerLisa, any of the options you mentioned will work. Freezing is by far the easiest way to store vegetables. Many cooks, however, feel that vegetables lose much of their falvor when frozen. That is why they opt to jar their vegetables.
Jarring is a tedious process that requires boiling the vegetables at an exact temperature for 45 minutes. The end product will last up to one year. There are entire books written on the correct procedures and equipment needed to jar, so I certainly cannot describe the entire process in this forum. But if you have a large amount of vegetables to store, it is definitely an option to look into.
In regard to frezzing, simply wash the vegetables and herbs, allow them to dry, and then them store in a ziplock bag. You can then place them in the freezer for storage.
