We have a a/c unit in the north side of our house.We had grass growing around it,which grew so bushy at times it was difficult to maintain.We are considering clearing about 2-3 feet of space around the unit and mulching it,so that plants do not grow around it.we also plan to place container plants (like ginger /taro ) on the mulch on 3 sides .Is any of this a good idea?

I think creating a space around your AC unit is an excellent idea. It keeps debris from getting inside your unit and reduces moisture. Mulch would work very well, but, I think pea gravel would be better. It requires much less maintenance, if any. Dig a 2 foot area around the unit about 2 inches deep. You may want to edge it with metal or plastic edging. Add a layer of landscape fabric then "pour" the gravel in. The steps are the same when using mulch, too.
Placing potted plants around an AC unit would work although they may dry out sooner so extra watering may be needed. Another option (depending on where the unit is) is a trellis with an evergreen vine. With proper maintenance it can be controlled and will be a nice screen for your unit.
