QuestionWould putting pavers with grass inbetween them with two playful dogs (they also have a dog run that they will be in most of the day) in LasVegas be to hot for the grass and will I have to redo the grass every year?

I don't think any one here can give you a straight answer here without knowing how much time and how vigorous the play will be. Vegas is brutal so a lot will depend on the grass type, the width of the joints, the soil conditions, the watering, the fertilization, dog urine, amount of play time on the grass, etc.
Unfortunately I think your only option is to try it an see what happens.
If it doesn't work you can consider a fake grass. In Vegas fake grass has been well received. (But i have no experience personally with this product).
Grass is relatively cheap. If you want to test it, buy a few pieces and place it to see what happens. Make sure it gets a few weeks un bothered so it can root in before adding the dogs.
