Is there a North/Central Florida native grass that stays low so I don't have to mow it. I want to get rid of all my Bahia grass that shoots up every year and I'd like to have native plants. Or maybe there is a groundcover?

If you do not like mowing, then you should seriously consider a ground cover.
Contact the Extension Service of the county in which you live in order to select the ground cover that will closest meet your specifications.
