Answer
The County Extension Service is your best bet for testing and interpretation of results. You can find the office nearest you at this site. http://edis.ifas.ufl.edu
There is a tab for 'Local Offices. There are three offices in Volusia County in Florida.
There are many books on the topic of home remedies for lawn care. Generally they advise that you treat your lawn like your hair; cut it often, comb (rake) it periodically and shampoo it regularly. Expectedly, everyone will have his or her own program and concoction(s); there is no reason why you cannot develop your own.
Ants can be repelled by cultural practices like mowing and irrigating.
Weeds are a purely subjective label for some plants. My own lawn is a mixture of grasses and broad leaf plants. I mow it every week at a constant height and it looks good to me.
Regarding your last question, I would have to turn it back to you and ask, "How much time, effort and money are you prepared to put into it?" That will determine the appearance of your lawn. Answer the question honestly to yourself and then set out to find a grass that will suit your program. It may well be that you can grow a fine bermuda hybrid. On the other hand you might decide to develop a program to make the present mixture of matchweed and common bermuda (my own mix) look pleasing.
Please understand that I am not being evasive. I sincerely believe that some people try to make a grass perform beyond its nature. For example, well grown St. Augustine is somewhat light green in color. In order to make it look "golf course green" requires large inputs of fertilizer and irrigation.
