QuestionWe put our lawn grass seed down only to remember that we are going away 5 days later for a 10 day holiday. Should we start watering now (for 5 days only) and then not at all for 10 days or should we wait to start watering only once we return from our holiday?

Well, you are supposed to keep the newly seeded lawn damp until it gets established well, so I am thinking either way would let the grass die.
Ask a nurseryman in your area, that you trust their judgement.
I just don't do grass by seed.
Every time I tried to plant grass seed, the darned birds ate almost all of it, so I just sod.
