What are my options re. keeping the red maple tree that's adjacent to my driveway from raining down sap onto my car, dog and driveway?

Sorry, but there is no way to keep a tree from dripping sap.
I had to have a much wanted mimosa tree chopped down for that reason. The sap will destroy the paint job on a car, and it was a no win situation for me.
If the tree is not on your property, than you will have to contact the owner of the property the tree is on.
Anywhere I know of will support your right to request the trr be removed.
If your neighbor will not be reasonable, you are legally entitled to remove any branches that overhang your property, in a straight line upward from your property line.
A property owner can be held financially for an damage done to another's property, buy a tree that overhangs their property.
Sure hope it is in your yard so you don't have a neighborhood dispute to deal with.
