Over the past year I have noticed that every time I plant something in Miracle-Grow potting soil, the squirrels dig in the soil, exposing the roots and leaving a mess.  They don't dig in the regular soil.  Is there something in the soil that they like?  Is there something I can do to deter them from doing this?

Interesting question. Maybe the different smell of the soil or that the item is new attracts them to check it out.

To prevent this activity, place the plant inside a secure enclosure.  Don't waste your time with repellents. Physical barriers are the best solution here.

Of course, what you are planting may also be an attractant.
