There are a number of baits you can use. Sardines, in oil, strawberry sugar wafers, molasses and honey, pizza (pepperoni or other meat based pizza). Dry dog or cat food can also work.
Understand that using meat based baits in the attic will rot relatively quickly so be prepared for flies and odor. Change the bait every two days to reduce this problem.
Removing a raccoon from the attic needs to be planned as if you bring the raccoon through your house, you need to be prepared for the possibility of it defecating while you carry it. I would suggest, putting the trap in a plastic back after capture and before carrying it through the house to catch urine or feces before they hit your carpet. Make sure the trap door won't open prior to moving it as well.
