QuestionI live in the Denver, Co area and I have hen and chicks on my deck in a strawberry pot which are growing very well. Do I leave them outside over the winter? They would be hard to water inside since the water drains out of all the little side holes. I have had them outside in the ground and they have done well and come back nicely in the spring but never planted them in a pot before.

Plants in a pot are exposed to wider extremes than plants in the ground (higher root temperature in the summer and vice versa in winter). Plants in the gound are protected from the extreme lows of winter because of they are most likely covered with snow.
On the other hand Sempervivum (Hens & Chicks) are very hardy (many to well below zero) and depending on the variety should do just fine. Here is a good article that might help:
