Question
My D. Spatulata has been flowering for since early spring here in Maine, and is continuing to produce flower stalks. It has stopped producing dew and begun to lose leaves, although it is kept wet via the tray method and receives full sun through much of the day on a south facing window sill. Is this a normal flowering cycle?

Producing leaves and dew takes a lot of energy for the plant.  Sometimes when a plant produces flowers, it'll divert its limited energy to growing flowers rather than new leaves.  This is normal.  As long as your plant is getting several hours of direct sunlight and have reddish leaves, you can assume your plant is producing enough energy.  If you don't plan on collecting seeds, you can cut off the flower stalks as they occur.  This will help your plant focus its energies on leaf and dew production.  Make sure the plant is also capturing some insects.  It doesn't need a lot, but bugs are a good source of nitrogen, which helps stimulate leaf growth.

You mentioned water.  What sort of water are you using?
