QuestionHigh I live in NC and I was thinking when my Florida giant sundew will transition into dormancy. And will I need to protect it during dormancy. And how wet should I keep the soil.

Your plant will most likely go dormant by mid November after a series of frost. If you live in coastal plains of North Carolina, you most likely won't need to provide any winter protection. Your plant will survive the winter just fine.
If you live in the Appalachian mountains, you need to cover your plant with mulch to insulate it from repeated freezing and thawing. Do this in early to mid December after you are certain your plant has gone dormant. You should also spray your plant with a sulfur-based funcide to prevent fungal infections. Do this prior to covering your plant with mulch. For mulch, use wood chips, pine needles, straw or aspen beding.
