One of my Sarracenias is doing so well, that its pitcher is turning brown on the sides from having so much insect in there.
It's pretty much all around the pitcher, not just a spot.
Do I trim off the pitcher or leave it there?

This is a very common occurrence. Just cut off the top of the pitcher, but leave the lower portion that still has bugs in it. This way the plant can finish extracting the nutrients.
