QuestionI have some barrels that measure between 2 - 3 inches across and about 2 inches deep and some small trenches that are about 4 x 1 x 2 inches all around. I plan to plant some miniature plants in them. Do you have any suggestions? These small barrels and trenches will be kept in the classroom where the air/heat is turned off at night. The temp in the room may range between 25 - 80 degrees, depending on the season. Thanks!

That is a very broad range of temperatures that the plants would have to adapt to. Most indoor plants are tropical in origin, but most of them will not tolerate temps much below 40 degrees.
Your best bet would be succulent-type plants, but they all require lots of sunlight. Light is the most critical element in selecting plants and you haven't provided any information about the available light in your classroom.
Succulent plants include, Cacti, Sedum, Jade, Crassula, Echeveria, and Euphorbias. All of them come in small sizes, don't grow very quickly and have small root systems, making them good for small containers.
BTW, it is important that your containers have drainage holes in their bottoms.
