QuestionI inherited a very large yucca plant and I have been watering sparingly because I am concerned about root rot, the top of it has started to collapse. Why??

If you inherited your Yucca fairly recently, then I suspect that it was prior care that has caused the upper stem to shrivel and collapse.
When a stem shrivels that means that everything above that point can no longer receive water and nutrients from the roots. All you can do is cut off the upper portion above the shriveled portion. This top cutting can then be rooted in damp potting mix or water. The lower portion probably cannot be salvaged
Not knowing the history of your Yucca, it is hard to identify the cause. I suspect improper watering, although it could have bee either watering too frequently or not frequently enough. Inadequate light is another possible cause.
