I apologize for taking so long to respond to your question, my mother is in the hospital and I've been running back and forth to monitor her care.
You can remove the plastic covering, it will make it easier to water the orchid. In fact, it would be best to remove the plastic entirely, exposing the pot. This will also allow any excess water to drain out the bottom of the pot.
Wait until the flowers have all fallen off before repotting it. Once they are gone you may repot it.
