I have purslane growing wild in my garden. It has rose colored flowers. Is it eatable? Mary Jo

Hi Mary Jo,
Thanx for your question.  Purslane is becoming more and more popular in the U.S.  It is eaten all over the world and is very popular in Latin American cuisine.  Some small farmers around me (I live in the Kansas City are) now grow purslane to serve the growing Hispanic community.  Wild purslane tends to be yellow flowered but some references I pulled up show a pink flower.  To be sure it is purslane, take a sample to your local County Extension Agent.  If you need contact information give me your general location and I will get that back to you.  Mostly purlsane is used in salads and stir fries.  I hope this helps.
