Question
I just bought a white lilac bush.  I know that you can darken a hydrangea bush by adding old coffee grounds.  Would this work for a lilac bush?

No, I sorry you can't change the color of your lilac - white it is and white it will always be!
Enjoy it, I say!  If you look out your window when it's dark, you'll see that the white almost glows, even when there's no moon.  When there is a moon showing it's almost 'other-worldy' - beautiful!
