QuestionI planted globe shrubs 3 years ago and have not pruned them yet. Is there a guide to follow to make sure they are round? Also, what about graphting Japanese red maple? Taking branches off top and puting lower on the trunk?

Pruning a plant to a specific shape can be difficult - but you may have a head start here. Your Globe shrub is probably already roughly round. Just clip around the sides and top of it a bit at a time and stop often to take a good look at what you've achieved.
Remember - a bit at a time! You can always cut off more if needs be, but you can't put it back on once it's off!!
Your Japanese Red Maple - I'm pretty sure it is not possible to take branches off the top and graft them lower down on the trunk, sorry.
