Just about any shrub can be cut into bonsai shapes. One of my nephews is very skilled in bonsai. He has used Azaleas, Junipers, Yews, Maple trees, Cedars, Boxwoods and Japanese Hollies.
I would recommend picking up some books on the proper bonsai pruning techniques and experimenting at your leisure.
