Hi Mary, it will, but it won't get any sweeter, only softer; this is why its important to hold off as long as possible , picking it, wait until its a brownish yellow color (and watch out for thieves, both two legged and four..) and then pick it. It will change color picked as well, but the taste will not improve, so wait until its entirely yellow/brown, thenj pick and enjoy!..Nick
