AnswerHi Tracy, as the banana fingers swell, they lose the rectangular look and begin to become oval; when you notice a couple of weeks of no more change, then its time to cut the bunch (or individual hands) off the plant and hang them in a cool, dark area to ripen. If you choose to just take a hand (sections) at a time, you will be able to draw out the time between ripening and not have them ripen all at once. If you decide to cut the entire bunch, the when you hang them, hang them inverted (opposite of how they were growing on the plant), so they don't get pulled off the bunch by gravity. Nick
