Bob, when a bunch breaks, it usually takes about 3 months before the bunch "plumps"; this is when the fruit swells and expands to its maximum, its at this point that you cut the bunch off and hang it in a cool area (garage, basement etc.)inverted! the reason you hang it inverted, is when it begins to ripen, it will do so quickly, and if the banana fingers are pointing up, they will peel off and fall to the floor, if they are inverted they will stay put....good luck, and if you need anything more,,,, just follow up!  Nick
