Thanx for your question. It sounds like you gave the persimmon seeds the correct amount of time and temperature for stratification. Now, the seeds need the warm period so they should either be in a greenhouse or you can go ahead (which is what I would do...) and put them outdoors. They should start sprouting when the soil temperatures remain above 60F. After the seedlings have emerged and they have their first set of true leaves (the first set are seed leaves) feed them with half-strength 12-12-12 balanced fertilizer once every 10 days or so until they are about 6-8 inches tall. Then they are ready to be planted out in full sun, side dressed with well-composted cow manure. In their second year, start using fertilizer spikes rated for fruiting trees. I hope this helps. Oh, if you live where there might be deer damage, surround the saplings with chicken wire so the deer can get to them. I hope this helps.
