Would it be possible to place a fresh peach seed in a sealed container (vacuum sealed) and store it for several months and have it still be able to germinate and grow once opened and watered.

Thanx for your question.   Store the seed in a cool, dry place where it won't be exposed to heat or humidity.  Or you can place it in a plastic baggie of moist potting soil, seal it and keep it in the fridge for at least 90 days and then in the spring, plant it in a large pot.   Expose it to warm temperatures and sunlight after the last frost.  I hope this helps.
