Hi Jim:

I mixed peat-moss in with my soil and the water doesn't absorb very well, it sort of pools on top.  I know you are a fan of pine bark, but I could only find pine mulch.  Will this work?

Yes it will. Shredded or mini nuggets are easier to work with than nuggets. Most garden centers sell something with pine bark in it. Products labeled "soil conditioner" or "top soil" often are mostly pine bark.  Also, chances are good that your local garden center has, or can get, a professional grower soil that is pine bark based.  
Most nursery stock is grown in a bark based soil. Plants root quickly into soil that has a transition zone of part your soil and part bark.  Jim
